Hello,
the great grandfather of my grandfather name was Theodore Vitale, we know that he was born in the island of Corfu (republic of venice) arround 1740, and studied medecin at the university of pisa,practiced in ottoman empire, he died the year 1800.
could you please advise how to find records about him from that period: university studies, birth certificate, baptsim etc, in order to find the roots of the familly

for researches in Corfù (and in Greece) see here from page 159:

It seems to be difficult to do genealogical research there because it's written: "...the records are in the individual churches (if they have not been destroyed), but they are fairly recent, since the keeping of records was a very chancy affair before 1800".
However you can also contact the General State Archives of Corfu (GSAC), e-mail : mail@gak.ker.sch.gr :

These Archives hold a lot of material according to this guide (page 15):
